Ingredients

  • 1 lb or 450 g ground chicken, ideally a mix of breast and thigh
  • 1 cup panko breadcrumbs
  • 1 3rd cup milk
  • 1 large egg
  • 1 2nd cup grated Parmesan cheese
  • 2 cloves garlic, finely grated or minced
  • 1 4th cup finely grated onion
  • 2 tablespoons fresh parsley, finely chopped
  • 1 teaspoon salt
  • 1 2nd teaspoon black pepper
  • 1 teaspoon Italian seasoning
  • 2 tablespoons olive oil
  • For the sauce
  • 2 cups tomato passata or crushed tomatoes
  • 1 tablespoon olive oil
  • 1 clove garlic, minced
  • 1 2nd teaspoon salt
  • 1 4th teaspoon black pepper
  • Optional pinch of sugar if sauce tastes sharp

Instructions

  • In a large bowl, mix the breadcrumbs and milk and let it soak for 1 minute until soft.
  • Add the egg, Parmesan, garlic, onion, parsley, salt, pepper and Italian seasoning, then gently stir until combined.
  • Add the ground chicken and mix just until everything comes together, being careful not to overmix.
  • With lightly oiled or wet hands, roll the mixture into golf ball sized meatballs and place them on a plate.
  • Heat olive oil in a wide pan or skillet over medium heat.
  • Add the meatballs and cook for about 2 minutes per side until golden brown all over.
  • Remove the meatballs to a plate and lower the heat slightly.
  • Add olive oil and garlic for the sauce and cook for 30 seconds until fragrant.
  • Pour in the tomato passata, salt, pepper, and optional sugar, then stir gently.
  • Return the meatballs to the pan, spoon sauce over them, cover, and simmer gently for 12 to 15 minutes until cooked through and juicy.
  • Remove the lid and let the sauce thicken slightly for 2 to 3 minutes.
  • Finish with extra parsley if you like and serve warm, spooned generously with sauce just like the photo.
