Warm and satisfying, this Chicken Egg Roll is an easy wrap filled with egg omelette, tender chicken, melty cheese and a touch of sweetness. Everything is rolled up in a tortilla and cooked until just right. It works perfectly for quick delicious meals or easy meal prep.

Ingredients

  • 2 large flour tortillas
  • 2 large eggs
  • 1 tablespoon milk or water
  • 200 g or 7 oz cooked chicken thigh or breast sliced thin
  • 60 g or 1 half cup shredded cheese cheddar mozzarella or a blend
  • 30 g or 1 quarter cup thin sliced purple onion
  • 30 g or 1 quarter cup thin sliced green bell pepper
  • 2 tablespoons BBQ sauce or tamarind sauce
  • 1 tablespoon oil or butter
  • Salt and black pepper to taste

Instructions

  • Warm the tortillas briefly in a dry pan over low heat until soft and flexible then set aside.
  • Whisk the eggs with milk salt and pepper.
  • Heat a non stick pan over medium heat with a small amount of oil.
  • Pour in half of the egg mixture and swirl to make a thin omelette.
  • Cook just until set then slide onto a plate and repeat with the remaining egg.
  • In the same pan add a little more oil and cook the chicken until warmed and lightly golden.
  • Add the purple onion and bell pepper to the pan and cook for one to two minutes until slightly softened but still crisp.
  • Lay a tortilla flat and place one omelette on top.
  • Sprinkle cheese evenly over the egg.
  • Add the chicken and vegetable mixture.
  • Drizzle lightly with BBQ sauce or tamarind sauce keeping it neat.
  • Roll the tortilla tightly into a wrap.
  • Place the wrap seam side down in a clean pan over medium heat
  • Cook for two to three minutes per side until golden and crisp and the cheese is melted.
  • Remove from heat rest for one minute then slice in half and serve warm.
