Homemade Calzone Pizza Recipe

Ingredients

  • Dough
  • 2 cups plain flour (250 g)
  • 1 teaspoon instant yeast
  • 1 teaspoon sugar
  • ¾ teaspoon salt
  • ¾ cup warm water (180 ml)
  • 1 tablespoon olive oil
  • Filling
  • 1 cup shredded mozzarella cheese (110 g)
  • ½ cup ricotta cheese (120 g)
  • ½ cup mushrooms, finely sliced
  • 1 cup fresh spinach
  • ¼ cup grated Parmesan cheese (25 g)
  • ½ teaspoon dried oregano
  • ¼ teaspoon black pepper
  • ⅓ cup pizza or marinara sauce
  • 1 tablespoon olive oil
  • For brushing
  • 1 egg, beaten or 1 tablespoon olive oil

Instructions

  • In a large bowl mix flour, yeast, sugar and salt. Then add warm water and olive oil and stir until a soft dough forms.
  • Knead the dough on a lightly floured surface for about 5 minutes until smooth and elastic.
  • Place the dough in a lightly oiled bowl, cover and let it rise in a warm spot for about 1 hour or until doubled in size.
  • While the dough rises, heat olive oil in a pan and cook mushrooms for 3 to 4 minutes until soft and any moisture has cooked off.
  • Add spinach and cook just until wilted then remove from heat and let cool.
  • Preheat the oven to 220°C or 425°F and place a baking tray inside to heat.
  • Divide the dough into two equal pieces and roll each into a circle about 8 inches wide.
  • In a bowl, mix ricotta, mozzarella, Parmesan, oregano and pepper.
  • Spread sauce on one half of each dough circle, leaving a clear edge around the outside.
  • Spoon cheese mixture over the sauce then add the mushroom and spinach mixture evenly.
  • Fold the dough over to form a half moon and press the edges firmly together to seal.
  • Crimp the edges with a fork and cut two small slits on top to let steam escape.
  • Brush the tops with beaten egg or olive oil.
  • Carefully place the calzones on the hot tray and bake for 14 to 16 minutes until golden brown and cooked through.
  • Let rest for a few minutes before serving and enjoy warm with extra sauce on the side if you like.
