Chocolate Cake Popsicles take your favourite box mix and turn it into something playful and irresistible. Each one has a creamy cake center wrapped in a rich, dark chocolate shell with a hint of Oreo crunch. They’re easy enough for weeknights but impressive enough for a party.

Ingredients

  • 1 box chocolate cake mix (plus ingredients listed on the box, usually eggs, oil, and water)
  • 1 tsp vanilla extract (optional, for extra flavour)
  • ½ cup frosting (store-bought or homemade, chocolate or vanilla works)
  • 8 oz dark chocolate, chopped
  • 1 tsp vegetable or coconut oil (to thin chocolate if needed)
  • 4 Oreo cookies, cream scraped out and saved
  • Popsicle sticks
  • Silicone popsicle mold (or shape by hand if molds aren’t available)

Instructions

  • Bake the chocolate cake according to package directions. Let it cool completely.
  • Crumble the cooled cake into a large mixing bowl. Stir in ½ cup frosting and the reserved Oreo cream until the mixture holds together like cookie dough.
  • Press portions of the mixture into a popsicle mold, smoothing the tops, and insert popsicle sticks. If you don’t have molds, shape the mixture into oval bars by hand and insert sticks. Place in the freezer for 1 hour to firm up.
  • Meanwhile, melt dark chocolate in a microwave or double boiler until smooth. Stir in a teaspoon of oil if it feels too thick. Mix the scraped Oreo cookie crumbs (without the cream) into the melted chocolate for extra texture and a deep black finish.
  • Remove the firm popsicles from the freezer and dip each one into the chocolate mixture, turning to coat fully. Let excess drip off.
  • Place on parchment paper to set, and sprinkle with extra Oreo crumbs if you’d like more texture.
  • Chill for 10 minutes to let the shell firm up, then enjoy your creamy cake popsicles with a dramatic chocolate shell!
