This Apple Puff Pastry recipe is proof that some desserts can be fancy without the fuss. Flaky layers, warm apples and just enough sweetness to make everyone ask for seconds. It looks bakery worthy but is surprisingly easy to pull off. A perfect way to brighten up a cold winter day.

Ingredients

  • 2 medium apples, peeled and diced small (about 2 cups or 300 g)
  • 3 tablespoons brown sugar
  • 1 tablespoon white sugar
  • 1 teaspoon cinnamon
  • Pinch of nutmeg
  • 1 teaspoon lemon juice
  • 1 teaspoon cornstarch
  • 1 tablespoon butter
  • 1 sheet puff pastry, thawed but cold
  • 1 egg
  • 1 tablespoon milk or water
  • 1 tablespoon granulated sugar for topping
  • Icing sugar for dusting, optional

Instructions

  • Add the diced apples, brown sugar, white sugar, cinnamon, nutmeg, lemon juice, cornstarch and butter to a small pan and cook over medium heat for 5 to 7 minutes, stirring often until the apples are just tender and the mixture is thick and glossy.
  • Remove the apple filling from the heat and let it cool to room temperature so it does not melt the pastry.
  • Preheat the oven to 210°C or 410°F and line a baking tray with baking paper.
  • Roll out the puff pastry slightly on a lightly floured surface and cut it into 4 equal squares.
  • Spoon the cooled apple filling onto one half of each pastry square leaving a clear border around the edges.
  • Fold the pastry over the filling to form a triangle and press the edges together firmly, then seal with a fork.
  • Place the turnovers on the baking tray and chill them in the fridge for 10 minutes to help them hold their shape.
  • Beat the egg with the milk or water and brush over the tops of the turnovers.
  • Sprinkle lightly with granulated sugar and cut 2 small slits on top of each turnover.
  • Bake for 18 to 22 minutes until puffed golden and crisp.
  • Cool slightly, then dust with icing sugar if desired and serve warm.
