Struggling for time and don’t know what to make for a healthy but delicious lunch? This Mediterranean style Mushroom and Spinach Omelette is going to keep you coming back for more! Not only is it super easy to make, but also takes just a few minutes to prepare. The Eggs make for a high protein meal, while the Mushrooms give a meaty and chewy texture, combined with the melted Cheese and a slight crunch from the Red Onions mixed with baby Spinach, it makes our mouth water just thinking about it! This recipe is perfect for a high protein breakfast as well as lunch.

Good question, this is a technique used to help you get fluffier and tender Omelettes. The added Water helps to prevent and minimize the chances of overcooking it.
The added Water also helps to create steam when your cooking it, which also helps to get your Eggs cooked more evenly. That’s not all, it will give them a nice “lift” making them easier to move ‘n’ flip.
The humble Egg is so versatile, it goes well with many things. fresh Tomatoes, Bell Peppers, Scallions, Butter, Onions, Mushrooms, fresh herbs, Cheeses like Gruyere and even Avocado! Feel free to get creative with your Omelettes.
Be sure they are seasoned well. A pinch of Sea Salt is a great way to enhance the flavour in this savoury dish. Black Pepper pairs extremely well with any Omelette as does Onion granules.
Garlic powder can also be used to increase and add more savoury depth into your Eggs while adding it’s own garlicky flavour into it. Smoked Paprika powder, Chilli flakes combined with fresh herbs like Rosemary, Oregano, Cilantro, and Parsley pair excellently with Eggs too elevating your Omelette game to another level!
Using Unsalted Butter is such an effortless way to instantly lift the flavour profile of any Omelette. Not only does it add it’s own richness but increases the depth of taste through it’s own buttery nutty flavour.
Adding a small amount of Water, say 15-25ml works well to keep them more airy in texture instead of being more denser.
Be sure to use the freshest Eggs possible. This is so easily overlooked when making the fluffiest Omelettes! The fresher, the better.
Giving the Eggs a good whisk is also easily overlooked. This can help make your Omelettes more fluffy.
