Ingredients

  • 8 oz (225g) spaghetti
  • 2 tablespoons olive oil
  • 1 cup (240ml) milk of choice (e.g., 2% dairy milk or unsweetened almond milk)
  • 1 teaspoon cornstarch
  • 1/2 cup heavy cream (for the Alfredo sauce)
  • 1/2 cup grated Parmesan cheese, plus more for garnish
  • 1/2 to 3/4 cup marinara sauce (optional)
  • 2 cloves garlic, minced
  • Salt, to taste
  • Freshly cracked black pepper, to taste
  • Chilli flakes, to taste
  • Fresh basil or parsley, chopped, for topping

Instructions

  • Cook the spaghetti in salted boiling water according to package directions until al dente. Save 1/2 cup of the pasta water, then drain the pasta.
  • In a large pan, heat olive oil and butter over medium heat. Add the minced garlic and cook for about 1 minute until fragrant (don’t let it burn).
  • In a small bowl, whisk the cornstarch into the milk until smooth.
  • Pour the milk mixture and heavy cream into the pan with the garlic, stirring constantly. Let it simmer gently until it thickens slightly, about 3–4 minutes.
  • Stir in the Parmesan cheese until melted and smooth. Season with salt, pepper, and chilli flakes.
  • Add the marinara sauce if using, stirring to combine and warm through.
  • Toss the cooked spaghetti into the sauce, mixing well. If the sauce feels too thick, add a splash of the reserved pasta water to loosen it.
  • Serve immediately with extra Parmesan and fresh herbs sprinkled on top.
