  • 115g (½ cup) unsalted butter, softened
  • 100g (½ cup) granulated sugar
  • 100g (½ cup) light brown sugar, packed
  • 1 large egg
  • ½ tsp peppermint extract
  • 1 tsp vanilla extract
  • 190g (1½ cups) plain/all-purpose flour
  • ½ tsp baking soda
  • ¼ tsp salt
  • 100g (¾ cup) white chocolate chips or chunks
  • 2 tbsp crushed peppermint candies or candy canes (plus more for topping, optional)

Instructions

  • In a large mixing bowl, cream the softened butter, granulated sugar, and brown sugar until light and fluffy.
  • Add in the egg, peppermint extract, and vanilla extract, then beat until well combined.
  • In a separate bowl, whisk together the flour, baking soda, and salt.
  • Gradually add the dry ingredients into the wet mixture, mixing just until combined—don’t overmix.
  • Fold in the white chocolate chips and crushed peppermint candies.
  • Chill the dough in the fridge for at least 30 minutes to help prevent spreading.
  • Preheat your oven to 175°C (350°F) and line a baking tray with parchment paper.
  • Scoop the dough into evenly sized balls using a cookie scoop or tablespoon, and place them spaced apart on the tray.
  • Optional: press a few extra white chocolate chips or bits of peppermint on top of each dough ball before baking.
  • Bake for 10–12 minutes, or until the edges are set but the centers still look slightly soft.
  • Let the cookies cool on the baking tray for 5 minutes, then transfer to a wire rack to cool completely.
