This vegetable chow mein, inspired by street food, is a riot of crunchy vegetables, jumbled noodles, and tantalising scents. Now take out your wok and let's get started on this flavourful adventure!

Ingredients You'll Need

300g Egg Noodles
1 Red Onion Thinly Sliced
1 Carrot Thinly Sliced
1/2 Cabbage Finely Sliced
2 Green Onions
1 Thumb Of Grated Ginger
2 Cloves Garlic Crushed Or Chopped
1-2 Green Chillies To Taste
2 tbsp Cooking Oil
1/2 tsp Salt
1/2 Black Pepper
1.5 tbsp Light Soy Sauce
1 tbsp Dark Soy Sauce
2 Cloves Of Garlic Grated
1 tsp Sugar
2 tbsp Water

Let's Get Started!

  • First chop up all your veggies into matchstick sized slices. Be sure to remove the core from the Cabbage before you chop them into thin slices. Keep half of the Green/Spring Onions to add into the Noodles and keep the rest aside for garnishing.
  • Let’s make the secret sauce for our street style Noodles shall we? For this we need 1.5 tsp Light Soy Sauce, with 1 tsp Dark Soy Sauce, add in 2 Cloves of finely grated/chopped Garlic, 1 tsp Sugar, Pinch of Salt, 2 tbsp of Water. Mix this well into a little bowl. If you want to get extra creative, you can use a 1:1 mixture of Ketchup to Chilli sauce of your desired choice and mix in properly to use on the Noodles once everything is stir fried.
  • Bring up some water to boiling point in a pot for our Noodles. Once its boiled add in 2 heaped teaspoons of Salt. Add in your Noodles into the hot water and after 20-30 seconds just gently stir them so they separate and can get cooked more evenly. We want to cook them for about 2 minutes less than the package instructions. So about a 80% cook as we’ll be stir frying them soon.
  • Once the noodles are 80% cooked, take them out into a separate bowl and soak them in cold water until the noodles have cooled down to stop the cooking process. We want our street food style Noodles to be yummy not overcooked! Drain out all the water from the bowl, and drizzle in some Peanut or Sunflower Oil on top. Gently stir the Noodles to get them evenly coated in oil to prevent them from sticking later on.
  • Are you ready to Wok ‘n’ roll?! Grab your Wok, drizzle in some oil into the pan and get these onto a high heat. Once the pan is hot enough, add in the finely chopped Garlic, Ginger and finely chopped Green Chillies and stir fry them with the Onions and Carrots for 1 minute. Then add in the Cabbage and stir fry for 1 minute.
  • Once the veggies are stir fried, take them out into a bowl or plate and keep them aside for a moment. Drizzle in some fresh Peanut Oil or Sunflower Oil into the pan and let’s stir fry these Hakka Noodles on high heat. Use chopsticks or tongs to toss them so they don’t break. Stir fry the Noodles for about 2-3 minutes or until lightly charred.
  • Let’s add the veggies back into the Noodles. Pour in our secret sauce we made earlier and using chopsticks or tongs, toss them gently while stir frying them for about 2 minutes max to get everything mixed evenly. Turn off the heat and garnish with the chopped Green Onions we kept aside earlier, serve and enjoy this yummy home made Veg Chow Mein!

    A great street food style Chow Mein dish is made up of 3 parts:

    Since this is a Vegetarian Recipe we’ve replaced the Oyster Sauce with a combination of Light and Dark Soy Sauce with a source of sugar for sweetness to balance the flavours.

    Feel free to use Oyster sauce in your recipe for added flavour though!

    Spring Rolls, Stir Fried Mushrooms, Fried Rice, Asian style Cucumber Salad, Tofu or Vegetable Skewers. Fresh home made Garlic bread can pair well with your Chinese Noodles too!

  • How Healthy Is Vegetable Chow Mein?

    The most unhealthy part of this recipe is maybe the quantity of Oil that’s used. To keep things fair and in perspective, this isn’t like its high in fat compared to other street foods.

    It’s not deep fried while the amount of oil used to Stir the Veggies first, then using a little more Oil to stir fry the Egg Noodles is not a whole lot compared to other dishes.

    We would say that this dish is not unhealthy by any means. It contains a good portion of healthy vegetables along with Ginger and Garlic which are great for a healthy body. Don’t be afraid to enjoy this tasty dish as part of a balanced diet without the guilt.
